Danish for that sparkling fizz in a carbonated drink, Brus is a new brewpub in Copenhagen’s Nørrebro neighbourhood offering more than just drinks. Comfortably situated in a raw, repurposed iron foundry, the project is also home to Spontan, the brewery’s restaurant with a seasonal, free flowing menu run by Denmark’s youngest Michelin-starred chef at 27 years, Christian Gadient. Brought to you by the guys behind Copenhagen’s gypsy brewery To Øl and Mikropolis Bar, Brus brews, barrels, and dispenses its experimental craft beers and organic sodas in an atmosphere that welcomes collaboration with other craft brewers. You can even take the party home with you by stopping at the Brus bottle shop.
