When you walk through the door to restaurant Höst, the scene positively exudes Scandinavia. It is like stepping into a calm realm in the middle of the busy streets of Copenhagen, and recycled timber, granite, and concrete form the visual backdrop for a menu rethinking the Nordic cuisine in surprising new ways. Natural materials are paramount in the décor, inviting guests to sit in traditional slat chairs covered in grey lambskin, among large green plants behind rustic panned windows, like in a romantic yet modern winter garden.
